This white koji miso is made with a generous amount of rice koji, using a 12:10 koji-to-soybean ratio for a gently sweet and aromatic flavour. Made with peeled soybeans for a clean, light colour and refined taste, it offers visible grains of koji that may float in miso soup. Suitable for miso soup, cooking, dips, or as a seasoning ingredient.
